What’s not to love about eating dessert for breakfast?!

One of the recipes in the August BodyMindSpirit® Membership Menu of the Month is a fave breakfast of mine, as of late. It tastes like I’m eating dessert for breakfast.
Coconut milk offers up great medium-chain fats, that our bodies use preferentially for energy. Chia seeds deliver a massive amount of nutrients, including protein, with very few calories. (Thank you, chia seeds.) And, they contain omega-3 fats, which most of us need more of. And the caboose on that splendiferous nutrient train?…this recipe is ridiculously easy to make.

Chia Seed Pudding for Breakfast

Serves 3

Fixings:

  • 1 3/4 c. coconut milk (or almond milk, if you’re not a coconut fan)
  • 3/4 c. water
  • 2 tsp. vanilla
  • 2 tsp. honey
  • 5 drops liquid stevia
  • 2 tsp. cinnamon
  • 1/2 c. chia seeds
  • Pint of fresh strawberries (or other berry awesomeness)
  • Unsweetened coconut flakes (omit, if you’re not a coconut fan)

Prep:

  1. Mix the first 6 ingredients well by whisking them, or tossing them in a blender (I prefer blender).
  2. Pour mixture into a glass or ceramic bowl or jar.
  3. Whisk in the chia seeds. Let sit on counter for about 15 minutes and whisk it every 5 minutes.
  4. Leave in the fridge for overnight, or at least 4 hours.
  5. Remove from fridge and stir well.
  6. Serve some into a bowl and garnish with sliced strawberries and coconut flakes.

Option:
If you, or your kids, find the texture displeasing, you can put all 7 (through chia seeds) of the first ingredients into a blender and blend on high for 1-2 minutes. Then continue on with prep, starting with number 4. Many LOVE the texture of the whole seeds, but I also recognize that some folks might not dig it.
