February is winding to a close and next Monday is February 29. Yup! It’s a leap year. That means you have a WHOLE extra day this year to mindfully weave more health and joy into your life. In celebration of that, today I’m sharing one of my FAVE, and most popular, Food Sass® shakes. If you are a fan of sweet potatoes, this is going to knock your socks off!
Sweet Potato Pie Shake
Serves 2
- 1/2 c. sweet potatoes, baked and cooled in fridge
- 2 scoops non-denatured whey protein powder
- 1/2 large organic red apple or 1 whole small one
- 2 medium carrots
- 1 tsp. cinnamon
- 3/4 c. coconut milk
- 1/4 c. water
- 5 ice cubes (about a cup)
- 5 drops stevia (optional, for a sweeter taste)
Blend up and enjoy.
Mmmmmm. Not only is this a frolic for your taste buds, but it’s loaded with nutrition awesomeness for your whoooole body. With both sweet potatoes AND carrots, this glass o’ joy is overflowing with beta-carotene, which is phytonutrient (antioxidant power!) that is known as provitamin A because our amazing bodies convert it into vitamin A. Who cares about vitamin A? You do!
Yes, it’s true that vitamin A is essential for healthy vision. Additionally, a few of vitamin A’s many roles in the body are enhanced immune function, bone growth, skin health, reproductive function. It also plays a key role in optimal formation and maintenance of the lungs, heart, kidneys, and other organs. That’s a hit list that we’d all be happy to promote in our sweet bod, yes?
Logistical shake-making tip: Thai Kitchen brand makes tiny little serving cans of unsweetened coconut milk that are perfect for shake-making. You can find these in the International Food aisle of your grocery story, or online, and it will say 5.46 FL OZ on the label. This makes measuring for shakes easy, because you pour the whole thing in, and then fill it half-way with water for the 1/4 cup water. AND, you don’t have to worry about your coconut milk going bad in between shake-making.
