June is fantabulous, is it not? I just spent a beautiful week up on a remote part of the Maine coast, working away on my book. With the disclaimer that I’m new at this, it seems that I’m tracking to have a completed manuscript (that’s book talk for “ready to be published”) by the end of summer-ish. Then, I’ll finalize my publishing research and move toward birthing the book out into the world. (Yay! Eeek!) I’ll keep you posted!
In other news, I’ve had two spots open up in my Transformation Coaching Program. This is a 6-month coaching relationship that provides you with weekly education, inspiration and empowerment via a curriculum AND puts you and I on the phone together twice a month. This program is created to be individually specific and I’ve worked with folks with aaaalll kinds of goals: health optimization, weight loss, clinical issues (digestion, cancer, endocrine imbalance, immune challenge, etc). One of those Transformation Coaching clients turned me on to a great store-bought Food Sass? item. As y’all know, I’m a big fan of food that builds foundational health. I’m also a proponent of home-prepared food with carefully selected Food Sass? ingredients that blast our sweet bods with nutrients. I’m ALSO a fan of saving time. So, you can imagine how excited I get when I discover a prepared food that has full-on sassy ingredients. Primal Kitchen makes splendiferous salad dressings with 100% Food Sass ingredients. I’m particularly smitten with the Green Goddess variety, and I recently discovered that it also makes a totally kick-ass chicken marinade! Like, both of my teenage sons described this recipe below as “awesome.” (That’s a big deal – meals I prepare are rarely “awesome” in their esteemed opinion. Grilled Green Goddess Chicken Tenders
Fixings:
- 1 lb. organic chicken breast, sliced into 1 inch strips
- 1/3 c. Primal Kitchen Green Goddess dressing
Prep:
- Marinade chicken in dressing for 1+ hour (stir half-way through)
- Grill on medium-high for about 10 minutes, 5 minutes per side – until done
Pairs well with:
Savage and Sassy Coleslaw and a big, fluffy green salad
