Vibrant Vine Salad

6? Servings

Fixings

  • 2 large red tomatoes, cut into 1-inch wedges (about 2 c.)
  • 2 pounds melon, cut into ?-inch by 2 ?-inch wedges
  • 1 cucumber, peeled, seeded, and cut into ?-inch wedges
  • ? small red onion, thinly sliced (about ? c.)
  • 3 tbsp. red-wine vinegar
  • 2 tbsp. extra virgin olive oil
  • 1 tsp. Celtic sea salt
  • ? tsp. fresh-ground pepper
  • ? c. fresh basil leaves, slivered or coarsely chopped

Prep

  1. Gently toss tomatoes, melon, cucumber, and onion together in a large bowl and set aside.
  2. To make dressing, combine vinegar, oil, salt, and pepper in a small bowl.
  3. Pour dressing over the fruit & veggie mixture and toss to combine.
  4. Cover and refrigerate for up to 2 hours.
  5. Sprinkle with basil and serve.

Doesn?t that sound amazing? It totally is! If you bring this to a summer BBQ gathering, everyone will hold up a ?10? for you (think Olympics) after they chow your amazing salad contribution. AND their cells will be all happy and cheering too. Enjoy!
